Garofano – Le Braci Negroamaro Salento – 2016

Of the entire production “Le Braci” turns out to be the spearhead, among the best expressions of Negroamaro in Salento born and wanted by Severino Garofano as the fulfillment of his personal project. Its name derives from the fiery, Mediterranean sensations it releases, pure Negroamaro from 50-year-old plants on clay-limestone soils where the grapes are harvested late with a slight overripeness. This step was desired in order to have a higher concentration and derive structure and aromas without exaggeration, fermentations are carried out in steel tanks for 10 days at a controlled temperature with subsequent aging in new barriques for 12 months before resting in bottles another 18 months. An eclectic and ingenious wine, different from what it was in the past in so many ways, it is destined for long aging to savor all its nuances both olfactory of plum, vanilla and spices and gustatory of softness, thickness and elegant complexity. All the personality of the South that will overwhelm you after just one glass.

In every corner of food and wine Italy surprises are never lacking, these are stories hidden from everyone’s sight, unique places perhaps little considered that today are the destination of the most fervent enthusiasts. If we go to Salento we find the figure of Severino Garofano. An indelible man for Puglia and part of the oenology of the South, an oenologist with a sharp and innovative mind considered by many the “Giacomo Tachis of the South” for his skill despite his humble origins. After his studies over the years he worked as a consultant at many wineries until he founded his winery in Copertino near Lecce in 1995, restoring an old farmhouse from the 1800s along with a vineyard, beginning his journey. The symbol of their fame will be Negroamaro, the main grape of the area and the pillar of Apulian wines, the only one able to give it an interpretation that is still stratospheric today in terms of both quality and longevity. He did from the earliest times natural work in the vineyard practicing green manure and selection of grapes even in the overripe phase following the climatic trend, in the winery he made room for modernity with technologies and surgical steps in vinification without distorting the origins of the grapes with aging in barrique followed by long stops in the bottle. Thanks to him, the profile of Puglia and its grapes as well as the wine growth of the South began to be re-evaluated.
