Giovanni Aiello – Chakra Blu Bianco Frizzante – 2021

The only outsider in the selection is this sparkling white that reflects the old family tradition handed down through the generations of wine “made as it used to be.” It is made from the area’s three indigenous white grapes such as Verdeca, Maruggio and Marchione through the Ancestral Method technique, or a second refermentation in the bottle. This is the most primordial form of producing bubbles in which the indigenous yeasts of the grapes are used, in fact, vinifications take place in temperature-controlled steel where some yeasts are preserved so as to activate the frothing with the help of liqueur de tirage in a total period of 50 days, after which a crown cork is put in place and degorgiatura does not take place as a future strength of the wine. Beautiful creaminess given by the stay on the lees, rich and varied nose with full and effervescent sips.

Description

Being a promoter of one’s land of birth to the world is not a simple thing, as wonderful as it is, it requires constant commitment and considerable skill in doing so. Giovanni Aiello has decided to be one for Puglia through wine. A land of great natural riches but with still unexpressed potential, he, an ambitious and passionate young man, decides after studying in Conegliano and Udine to leave for an experiential journey around the world (France, California and Australia) in which he acquires techniques and knowledge, before returning home and realizing the dream of producing his own wine. The opportunity arises in the village of Castellana Grotte in the Itria Valley when he takes custody of the vineyards of an elderly couple in their nineties, it is a true natural heritage where the plants are centenary and are found in the so-called “Canale di Pirro” a very suitable area thanks to the karst soils around 300 meters where the various temperature variations create a perfect microclimate for fragrant and tasty wines. Today a family-run business managed with the utmost respect for the territory with the use only of natural compounds, a few hectares are cultivated with all native varieties such as Verdeca, Primitivo, Maruggio and Marchione with vines between 60/100 years old in the classic sapling. Great meticulousness in the work in the cellar where the vinification is partly carried out with whole bunches and small barrels are used in the refinements for a production of around 30,000 bottles per year. As a yoga practitioner he called his selection “Chakra” to symbolize the indissoluble bond between earth and man understood as pure energy among the components for a rapidly growing viticulture in the future. A passion that makes him a pillar for the new direction and makes him in all respects an “Oenologist for Love” as well as his company.
