Fontodi – Vinsanto del Chianti Classico – 2013

VinSanto is the Tuscan raisin wine par excellence, of centuries-old origins the name seems to derive from its use during mass ceremonies by priests, always made from local grapes such as Trebbiano and Malvasia following the drying of the grapes. In Fontodi’s version Malvasia and Sangiovese are used by taking the best berries from the various vineyards and allowed to dry for 5 months, after pressing the must is transferred to 50 and 110 liter French oak and chestnut barrels alternating the use of “Mother.” This traditional technique consists of leaving or reusing the lees inside the kegs of the previous production in order to stimulate subsequent new fermentations and give the classic features of the raisin wine. Following this process, the wine remains there a minimum of 6 years before being bottled. Totally as exciting to talk about as to taste it, the aromas are intense with liqueur and candied notes, it remains dense and enveloping on the palate where there is a discreet alcohol content resulting from aging. Cantucci are highly recommended in the pairing.

Description

Fontodi is defined in many ways, each of which underscores the history of its fame and its wines that have now conquered palates around the world, bringing the name of Tuscany into vogue. This splendid winery was founded in 1968 when the Manetti family took over ownership; it is located in Panzano in Chianti within the Chianti Classico DOCG in what is known as the “Conca d’oro” because of its unique, south-facing soils with varying altitudes where Sangiovese, and more, ripens to extraordinary levels. They famous terracotta producers, embarked on a new path by taking advantage of the knowledge of the land by planting the first vines on stony, marl-rich soils releasing the first la bel a few years later. Focused on environmental sustainability they obtained organic certification, cultivating 80 hectares planted mainly with Sangiovese, Canaiolo, Malvasia and Pinot Noir without the use of chemicals but only with organic crops produced by them. Work in the winery is precise and delicate, thanks in part to the support of the architecture of the planting arranged on various levels, the use of intrusive technologies is avoided by taking advantage of gravity so as not to damage the grapes, only wood is used in vinification, and aging lasts at least 12 months. It is the most genuine and purest territorial version of what a landscape can symbolize.
