Ronco Severo – Ribolla Gialla – 2019

The queen grape par excellence of the Friulano panorama, Ribolla is renowned today for its fragrance and especially for its propensity to aging in its macerated version. Vineyards more than 30 years old on Ponca soils, from which the grapes are harvested late in order to be well concentrated, carry out the fermentation in contact with the skins with indigenous yeasts in oak barrels at room temperature. After several pressings the grapes are lightly pressed in order to extract the noble parts from skins and they are left on skins for 11 months in 25 Hl Slavonian oak casks, subsequently the wine ages in the same casks for other 15 months before bottling without being filtered. The result is a great wine, very inebriating with fruity and citrus notes which evolve in noble spicy touches, it has a good minerality and good acidity typical of this splendid grape.

Productive Notes: spontaneous fermentation with long maceration on skins, then the wine ages on its fine lees in Slavonian oak barrels for 11 months. After racking, the wine ages in the same casks for another 15 months, then it is bottled without any filtration or clarification.

Description

Ronco Severo winery is located in Prepotto, in the province of Udine, a place particularly suited for viticulture, in fact we are in the denomination of Colli Orientali del Friuli. Right here Stefano Novello in 1988, after finishing the enological school, he joined the family business and after a very short time he decided to apply his thought about making wine, that is non-interventionism. Stefano’s work takes place in a unique territory, characterized by the soil called Ponca (Sandstone Rock), thanks to his resourcefulness and passion he was able to interpret the soil by re-proposing Friuli’s tradition but in a modern way. Ronco Severo has 11 hectares in production, the work in the vineyard is all based on the principle that in order to express the territory it is first necessary to take care of the soil, in the cellar he focuses on long macerations in order to extract color and aromas without filtering and clarifying. All his wines play on the balance between pleasantness and precision without lacking of great character.
