Friulano grapes used by Stefano come from over forty years old vines and are harvested late in order to give more depth and body. Long macerations on skins and use of indigenous yeasts. A wine which fascinates and seduces for the intense preciousness of its fruit and for its tasty mouthfeel. Little more than 4000 bottles produced, do not miss it!

Productive Notes: Spontaneous vinification with long maceration on the skins. The wine then ages on its fine lees in Slavonian oak casks for 11 months. Racked, it ages for another 12 months in the same casks. Bottling without filtration or clarification, during the waning moon.

Description

Ronco Severo winery is located in Prepotto, in the province of Udine, a place particularly suited for viticulture, in fact we are in the denomination of Colli Orientali del Friuli. Right here Stefano Novello in 1988, after finishing the enological school, joined the family business and after a very short time he decided to apply his thought about making wine, that is non-interventionism. Stefano’s work takes place in a unique territory, characterized by the soil called Ponca (sandstone rock), thanks to his initiative and passion he has been able to interpret the soil proposing again the Friulian tradition but in a modern way. Ronco Severo has 11 hectares in production, the work in the vineyard is all based on the principle that to express the territory you must first take care of the soil, in the cellar he focuses on long macerations to extract color and fragrance without filtering and clarifying. All his wines play on the balance between pleasantness and precision without lacking of great character.
