Giovanni Aiello – Chakra Essenza Verdeca – 2021/22

An Apulian white that is absolutely unusual for the area and unthinkable just 20 years ago, a label that embodies the spirit of a region and the true essence of work towards the territory. It is a pure Verdeca, a native grape very widespread in the Bari area which has very delicate characteristics by nature both in aromas and taste which however in this version is absolutely unusual. Produced in 4300 bottles, it is obtained from a century-old sapling vineyard where the harvest is divided into two moments, in the first some grapes are harvested in advance to obtain a “Pied de couve” in order to favor spontaneous fermentation with the yeasts in the must subsequently, in the second moment the rest of the grapes are destemmed and delicately pressed in steel tanks, at the same time a small part of the mass is macerated on the skins. Once this phase is completed, the wine remains in the same tanks for 12 months during which periodic batonnage is carried out, expanding its components before remaining in the bottle for 6 months. A meticulous process to obtain a wine rich in details, very intense hints of aromatic herbs together with notes of spice, on the palate it shows itself with a beautiful body and significant complexity given by the acidic and savory components that make it a persistent drink. Description

Being a promoter of one’s land of birth to the world is not a simple thing, as wonderful as it is, it requires constant commitment and considerable skill in doing so. Giovanni Aiello has decided to be one for Puglia through wine. A land of great natural riches but with still unexpressed potential, he, an ambitious and passionate young man, decides after studying in Conegliano and Udine to leave for an experiential journey around the world (France, California and Australia) in which he acquires techniques and knowledge, before returning home and realizing the dream of producing his own wine. The opportunity arises in the village of Castellana Grotte in the Itria Valley when he takes custody of the vineyards of an elderly couple in their nineties, it is a true natural heritage where the plants are centenary and are found in the so-called “Canale di Pirro” a very suitable area thanks to the karst soils around 300 meters where the various temperature variations create a perfect microclimate for fragrant and tasty wines. Today a family-run business managed with the utmost respect for the territory with the use only of natural compounds, a few hectares are cultivated with all native varieties such as Verdeca, Primitivo, Maruggio and Marchione with vines between 60/100 years old in the classic sapling. Great meticulousness in the work in the cellar where the vinification is partly carried out with whole bunches and small barrels are used in the refinements for a production of around 30,000 bottles per year. As a yoga practitioner he called his selection “Chakra” to symbolize the indissoluble bond between earth and man understood as pure energy among the components for a rapidly growing viticulture in the future. A passion that makes him a pillar for the new direction and makes him in all respects an “Oenologist for Love” as well as his company.
