Sottimano – Barbaresco Pajoré – 2020

The mention of Pajorè has become something of a cult in the history of Barbaresco, we are talking about a fabulous hill with incredible potential located in the municipality of Treiso from which unique and unparalleled wines are born. Always considered special it was thanks to the Ligurian Giovanni Moresco that the fame of the vineyard rose after vinifying it in purity in 1967 for the first time attracting then the interest of other producers including Angelo Gaja, today the largest owner in the interior. This is an area where the clay and limestone layers are greater than the sandy ones, the exposure tends toward the southwest at an altitude of 350 meters, and it is here that the Sottimano family has a 70-year-old vineyard. Very limited production, fermentation and maceration on the skins in steel tanks with indigenous yeasts for a duration of 25 days, after malolactic fermentation there is an aging of 18-20 months in used barriques. The result is a wine of stupendous elegance, not excessive but coincident with aromas of red fruit and delicate spicy notes, good structure and harmony with final tannins of the right persistence.

Description

The winemakers of yesteryear still exist. The Sottimano family is a fantastic example of how that world is the basis of Langa life, we are talking about the 1960s-70s when Rino finished wine school, founded his own company and decided to start making wine. Few family hectares but at Neive, one of the best areas for the production of Barbaresco, the difficulties were not easy in fact sacrifices were the basis of every day in a complicated historical period. Skilled as few were, he was able to bridge those moments by immediately making masterful quality with wines with a traditional yet innovative touch, a lot of work in the vineyard along with careful selection of clusters and subdivision of the various plots in order to obtain more detailed products. Compared to the beginnings today there are 18 hectares between Barbaresco and Neive in 5 of the best crus such as Cottà, Pajorè, Fausoni, Currà and Basarin where the winery’s philosophy has remained the same in environmental conservation without the use of chemicals but natural so as not to alter the balance of each hill. The approach in the cellar is a mixture of traditional and modern with spontaneous vinification, long extractions in macerations and aging in wood of a minimum of 12 months with the use of small or large barrels depending on the label. These are wines that reflect the terroir those made by Rino and his sons, unfortunately very limited quantities but inside each bottle there is the same thing: a lot of passion.
