We are talking about the end of the 1960s when Rino, having finished his oenological school, decides to start producing wine, a few hectares but in the best areas for the production of Barbaresco. Today the company owns 18 hectares, 5 of the best Barbaresco crus: Cottà, Pajorè, Fausoni, Currà and Basarin conquered with hard sacrifices, work and above all a lot of passion. The philosophy of the company has always been to respect the earth as much as possible, so in the vineyard no chemicals or herbicides are used to avoid altering the natural balance of the hills and in the cellar the approach is the same, Rino together with his children , who have joined the team, produces wines that reflect the terroir and best enhance the characteristics of the grape.
Fausoni, a cru in the municipality of Neive that gives us wines that stand out for their solid and wrinkled style. The Sottimano company owns just over one hectare, the plants have an average age of 45 years and the yields per hectare are very low, the wine obtained is nothing short of surprising.Great elegance, on the nose and on the palate, excellent structures with a distinctive “fatness” and a right dose of tannin and acidity that underlines its origin. In this 2016 vintage, the best of the last 20 years, you will find a wine with enormous potential and an extra freshness. Absolutely to keep.

Productive Notes:After a maceration of about 25 days, in which the alcoholic fermentation takes place at a controlled temperature without the use of selected yeasts, the wine is decanted into French oak barriques where it will naturally malolactic fermentation and where it will remain sur lie for 18 months.
