Roy-Prevostat & Fils – Chablis Premier Cru Les Lys – 2011

A Premier Cru with a long history in Chablis, its prestige was such that it once belonged to the King. Les Lys takes its name from the lilies that bloom in the spring and is located on the opposite slope of Les Vaillon at an ideal elevation. The southeast exposure allows for slower ripening thanks to the less intense morning sun; the soils here consist of clay, limestone, and marine sediments, where the vines range in age from 25 to 60 years. Fermentation takes place with natural yeasts for three weeks in stainless steel tanks, and after malolactic fermentation, repeated bâtonnage is performed for 18 months. It is a true explosion of exotic fruit flavors and notes that evolve over the years, with excellent initial acidity and mineral traits complemented by softness and sophistication.

In the Chablis region stands an ancient monastery dating back 1,000 years, founded by the monks of Pontigny, who planted the first vines; today, the Domaine Roy-Prevostat is located here. The winery was established in 1902 when the two most prominent families, Roy and Prevostat, joined forces to create the appellation’s finest estate—a true long-term project made possible by their ownership of 15 hectares of premium vineyards. Over time, they have become a true inspiration in the vineyard management methods used, such as “integrated pest management” to promote plant health, plot-by-plot division and production, and extended aging periods ranging from 2 to 10 years depending on the type of wine. Les Vaillon, Les Lys, Grenouille, and Blanchot are some of the Premier and Grand Cru classified plots, renowned for their unique exposure and terroir, from which only a few thousand bottles are produced. Today, Daniel-Etienne Defaix carries on the tradition, producing the most representative expression of the region for those who wish to collect or age one of his legendary wines.
