Rivetto – Kaskal Metodo Classico Dosaggio Zero

Among the most intriguing curiosities in the Langhe region is Nebbiolo sparkling wine, certainly a rarity outside the region but today one of the finest sparkling wines to discover. Produced using the classic method, which allows each producer the freedom to choose their own style and interpretation, Rivetto has, from the very beginning, created a label that stands out for its quality. The name “Kaskal” derives from Sumerian, meaning “The road that leads to the King,” serving as an impetus to explore the grape’s potential; it is a limited production of 2,000 bottles per year. The vineyard is located in Serralunga d’Alba, where the tips of the bunches with the best acidity are selected and vinified in temperature-controlled stainless steel tanks. Aging on the lees lasts 60 months prior to disgorgement, always with zero dosage, in order to enhance the wine’s flavor profile and persistence. Its reputation in recent years has grown to such an extent that it is highly sought after; the aroma is floral with mineral notes derived from the native limestone soils. On the palate, it is taut, with great impact and excellent verticality, and does not lack elegance despite its enveloping quality. Fresh yet precise and complex. A true manifesto for Nebbiolo.

The history of the Rivetto winery dates back to 1902, on the hills between Serralunga d’Alba and Sinio. It is a story of sacrifice, hard work, and a great deal of passion, passed down from generation to generation until it reached Enrico, the last heir. For the Rivetto family, wines have always had to embody both the poetry of an ancient history and the relevance of a new philosophy, but above all, they must respect the identity of the grape variety and its territory of origin. The latest dream come true is that of Enrico’s open-minded and forward-thinking vision, who sought to stand out and obtain Demeter biodynamic certification. A pioneer of a new movement in which profit is no longer the focal point—profit at any cost, willing to exploit the soil, resources, and labor—but rather a deep love for one’s land.
