La Caudrina – Moscato Passito Redento – 2018

Moscato Passito has been produced in the Langhe for more than three hundred years, but Dogliotti’s is not a simple Moscato Passito. It was born from years of experimentation that led to the realization that once the grapes have been dried in the vineyard, they are harvested and after fermentation the wine must age for at least 18 months in barriques to preserve fragrance and aromas. It exudes humanity, serenity and friendliness, and is a wine that comes from the sweat of the brow and toil, but also from passion and love for one’s craft.

Productive Notes: the must ferments at a low temperature at about 15° until it has made about 12 degrees of alcohol. Then the cleaned and filtered wine is put into barriques for aging, which lasts approximately 18 months. After that period, the wine is filtered and bottled to be further aged in the bottle for about 6 months.

Description

The history of the Caudrina winery begins with Redento Dogliotti in the early 1940s, we are in Castiglione Tinella a small village between the Langhe and Monferrato, one of the areas always considered among the best for the production of Muscat. Since 1997 the winery has officially been in the hands of his son Romano Dogliotti, who has decided to specialize in the production of quality wines that respect tradition and territory.
