Gravner – Ribolla – 2013

Ribolla Gialla is the most important grape variety in Brda and definitely for Josko Gravner as well, the wine produced with this grape variety is the most important and representative of the winery, a wine which became a legend thanks to its original style. “I take what nature gives me” this is Josko’s philosophy, in fact his Ribolla is aged in amphora without controlling temperature and sugar level following the rhythms of nature and the phases of the moon. A white wine that is more like a red, long macerations, deep aromatic profile, great persistence, in short, poetry in the glass!

Productive Notes: Fermentation with long maceration in buried Georgian amphorae, with indigenous yeasts and without temperature control. After racking and pressing it returns to amphorae for at least another 5 months before starting the aging in large oak casks, where it remained 6 years.

Description

We are in the wine area between Italy and Slovenia, Oslavia a small village, here in 1901 was established Gravner winery. In the 1980’s Josko Gravner started working in the winery practicing traditional viticulture but he was not satisfied with this kind of work and after some journeys in Caucasus, in the 1990’s he decided to get rid of all the technology he had bought and to work in a very unconventional way, creating a unique and unmistakable style. In the 15 hectares of vineyards the work done is maniacal to say the least, methods that lead back to the most ancient beliefs of the territory without the use of synthetic products, the winery has no modern equipment, amphorae from Caucasus are the protagonists!
