Bibo Runge – Riesling Sekt Brut

Rheingau was the birthplace of Riesling, the most historical vineyard was planted by Cistercian monks coming from Burgundy, today it is one of the smallest wine regions of Germany but where they produce wines of great quality, recognized all over the world. In the small village of Hallgarten, Bibo Runge winery was founded by Walter Bibo, a great wine connoisseur with an incredible experience in the best wineries of the country, so since 2013 he decided to make his dream come true by creating wines of great personality. In 2017 he met Markus Bonsels, a biotechnician who after 25 years of work decided to get back into the game by studying viticulture and enology, from the beginning a great understanding was born between the two of them which they express at their best in the wines they produce.
The most interesting bottle of the winery is a surprising classic method made of Riesling grapes, the work in the vineyard is meticulous, bunches are harvested by hand, after an aging in wood, the wine undergoes a second fermentation in bottle and stays on its lees for 18 months. A sparkling wine intense to the nose and extremely pleasing in the mouth thanks to the fine bubbles and the typical acidity of riesling.

Productive Notes: Grapes harvested by hand, pressed on the French champagne press and then fermented and aged in our oak barrels for at least 10 months. During the traditional fermentation in the bottle, the sparkling wine is left on the lees for at least 18 months before disgorging
