Bibi Graetz – Testamatta IGT Toscana Rosso – 2015

In the splendid Villa Aurora, in the center of Fiesole, we find the eclectic Bibi Graetz, we cannot define him as an entrepreneur but definitely as a visionary, son of artists but he always knew how to love good wine and all the world around it. He continued to advance and to develop his knowledge about wine production, until, in 2000, destiny allowed him to harvest and produce his own wine. This was the beginning of a great career and one of the most creative wineries in Tuscany and Italy. In a little less than 20 years Bibi managed to build a winery recognized worldwide thanks to his continuous search for excellence, his wines are unique and characterized by complex aromas but always with a very elegant palate. His grapes are produced from about 80 hectares of vines scattered all over Tuscany, many of which are almost 60 years old. Bibi has resisted the fashion of cultivating international vines, using only autochthonous vines, such as Sangiovese, Canaiolo and Colorino, Ansonica, a white vine native to the island of Giglio and Vermentino.
Testamatta is a pure Sangiovese coming from vineyards cultivated north from Florence, stony soils and old vines, whose average age is about 80 years old. A wine whose two main characteristics are transparency and minerality. As we know, perfection does not exist, even though this incredible Tuscan red wine is really getting close to it, a bottle not to be missed for celebrating an important event.

Productive Notes:Vinification takes place in barrique, where the must ferments spontaneously thanks to the presence of indigenous yeasts, with 6-8 manual punch downs daily and at regular intervals. The subsequent aging lasts two years and it is done in French oak barriques where a small part of the wood, about 10%, is new.
