Louis de Sacy – Champagne Les Courtisols Extra Brut – 2014
Cuvée produced by the Maison for the first time in 2013, this is one of the most important bubbles in their selection, made from a blend of 75% Pinot Noir and 25% Chardonnay with grapes sourced exclusively from individual vineyards. The vineyards are located in the Grand cru of Verzy, an area with clayey/limestone soils that together with the excellent north/east exposure and sea winds give the grapes great complexity. This vintage is fermented in small stainless steel tanks where, after drawing, it is aged on the lees for 6 years before disgorging. The resulting bubble has an excellent perlage, a true synthesis of power and delicacy accompanied by fruity hints and a savoury, crisp finish.

Productive Notes: All the grapes are vinified separately in steel tanks for fermentation, to distinguish the various characteristics of each grape variety. It proceeds with malolactic fermentation in barrique, where it rests for a year. Subsequently all the grapes are assembled in wooden barrels for another six months.

Description
Among the many wineries in the Champagne region, Louis de Sacy is one of those that is asserting itself firmly on the international scene. Situated in Verzy, in one of the Grand Cru communes in the Montagne de Reims, since 1633 as many as 13 generations have followed one another, united by the sole desire to excel. However, the recent history begins with Andrè de Sacy when he decided in 1962 to start his own Champagne production, laying the foundations on which the company stands today. From its inception to the present day, it owns 18 hectares of property divided into 23 parcels where the three local varieties Pinot Noir 65%, Chardonnay 30% and Pinot Meunier 5% are cultivated with vines of an average age of 30 years that take root on soils rich in clay/limestone. An environmental context with minimal use of chemicals, where agro-forestry is practised to reduce monoculture, creating an eco-sustainable landscape that has earned the Maison its first awards in the region. This respect for the land, linked to the trends of the year, is a strong source of inspiration, the main objective being the pure expression of the terroir in order to identify the various territorial identities, from the village to the individual vineyard. Vinification is carried out both in stainless steel and in oak barrels with an aging time on the lees ranging from a minimum of 24 months to over 10 years. “No rules” is the expression that best sums up their innovative style.
