Paolo Scavino – Barolo Ravera – 2019
In the commune of Novello, Ravera certainly represents the most renowned expression of Barolo in terms of complexity and evolution over the years. The Scavino family makes a genuine interpretation of it, a wine very balanced in each component, the plants are up to 40 years old distributed in three different plots where the soils are clayey in nature. All vinification is carried out in steel tanks lasting up to 20 days, aging is done for 12 months in barrique and 12 months in large barrels before bottling. A Barolo with notes of black fruit, underbrush and licorice, discreet structure and dense tannins with savory sensations on the finish.

Description
Among the most internationally renowned names for the production of the historic Barolo wine, one could not miss Paolo Scavino. The farm was founded in 1921, in Castiglione Falletto, by Lorenzo Scavino and his son Paolo, who began cultivating the famous local varieties such as Dolcetto, Barbera and Nebbiolo. But it was with the entry of Enrico Scavino that the valorization of Nebbiolo began, differentiating the areas where the highest quality of the grape was noted by purchasing parcels in other municipalities of the Barolo area, in the most vocated Cru such as Monvigliero, Cannubi, Bussia, and Rocche dell’Annunziata. Starting in 1978, it was decided to vinify the Cru separately, where Bric del Fiasc became the winery’s first single vineyard because from the soils composed of sand and fossil marl, called Tov, the most valuable grapes stood out. To date with 32 hectares divided into 8 communes, we breathe a tradition handed down in the vineyards for decades, arrived at the 4th generation with the idea of a viticulture superior to enology, of a devotion to work with the aim of achieving the interpretation and purity of the territorial essence. Committed to a production of absolute quality, the use of chemical elements in the environment and work in the cellar has been reduced, where the use mainly of barriques in winemaking have made it a pioneer of this style. Care and Passion are the pillars of one of the most renowned and inspired realities of the Piedmontese wine scene.
