Paolo Scavino – Barolo Bric del Fiasc – 2009

Certainly the most important vineyard of the winery, so much to become its symbol when in 1978 Enrico Scavino decided to vinify this vineyard separately from the others in order to express its potentiality. These nebbiolo vineyards are located in the hamlet of Fiasco, near Castiglione Falletto, with vineyards having an average age of 30 years, exposed in southwest direction on sandy/clayey soils which give wines an interesting structure. After the harvesting of grapes, maceration and fermentation are done in steel tanks at controlled temperature with indigenous yeasts. Aging is done in new and used barriques for the first 10 months, followed by 12 months in large casks after which it is further aged for 10 months in steel tanks and 10 months in bottle. The result is an iconic, ready-to-drink wine that reflects the identity of the Paolo Scavino winery, with aromas of great finesse and aromaticity and a refined tannic texture that speaks Piedmontese.

Productive Notes: Submerged cap maceration for 10-12 days and alcoholic fermentation for 20-30 days are done in steel tanks at controlled temperature with indigenous yeasts. Afterwards malolactic fermentation is done in wood before aging where the first 10 months rest in new and used barriques, then it continues 12 months in large 50 Hl casks before returning 10 months in steel followed by 10 months in bottle.

Among the most renowned names at international level for the production of the historic Barolo wine, Paolo Scavino could not be missing. The winery was founded in 1921, in Castiglione Falletto, by Lorenzo Scavino and his son Paolo who started cultivating the famous local varieties such as Dolcetto, Barbera and Nebbiolo. But it is with Enrico Scavino’s arrival that the valorization of Nebbiolo began, differentiating the areas where it was noticed the higher quality of the grape by purchasing plots in other communes of the Barolo area, in the most suited Cru such as Monvigliero, Cannubi, Bussia, Rocche dell’Annunziata. Since 1978, it was decided to vinify separately the Cru, where Bric del Fiasc became the first single vineyard of the winery as the soils composed by sand and fossil marl, called Tov, were the most valuable grapes. Today with 32 hectares divided in 8 communes, it is possible to breathe a tradition handed down in the vineyards since decades, arrived at the 4th generation with the idea of a viticulture superior to enology, of a devotion towards work with the purpose of reaching the interpretation and the purity of the territorial essence. Committed to a production of absolute quality, the use of chemical elements in the environment and the work in the cellar, where the use of mainly barriques in the vinification have made it a pioneer of this style.
