Marolo – Grappa Stravecchia di Barbaresco Rabajà – 2006
Rabajà is considered the best vineyard in Barbaresco, Marolo thanks to the careful selection of pomace from the 2006 vintage, has produced a classy grappa trying to enhance the organoleptic characteristics that this parcel gives. The grappa in this case, after being distilled in a bain-marie, was aged for 12 years in oak barrels. Soft body, grace and gentle aromas make this grappa unique.

Marolo is one of Italy’s most niche distilleries. It was founded in 1977 in a suburb of Alba, when Paolo Marolo, formerly a herbalist teacher at the Alba wine school, partly out of passion partly for fun began distilling grape pomace from the Langa and Roero. In just a few years he created a true quality boutique! He was one of the first to select the best pomace from the finest wineries,and to distill specific vintages and crus. The method that made him so famous was bain-marie discontinuous distillation, so precisely to preserve every single characteristic of the grape of origin, and produce only a few thousand bottles. One of the youngest distilleries, but with unparalleled quality and product research.
