Bekka Valley, Lebanon, here vines are planted up to 1800 meters of altitude thus allowing to counterbalance the taste of sun overripe grapes, rainfall is very scarce and therefore allow the use of organic farming methods in most of the vineyards.Clayey-calcareous, calcareous, sandy and gravelly soils make up a real mosaic of terroir. Vines enjoy an exceptional exposure to sunlight without irrigation. Clos St. Thomas is born and developed in a land rich in history, the wine matures in caves dug at a depth of thirty meters below the castle walls. A sustainable viticultural policy allows the vines to thrive, while respecting the expression of the terroir. The journey from vineyard to bottle is carried out with the most meticulous attention to detail and the winemaker ensures a perfect balance between tradition and modernity in a winery equipped with state-of-the-art equipment. “Les Emirs” from Clos St. Thomas winery is made with syrah, grenache and cabernet sauvignon grapes. After manual harvesting of grapes and fermentation in steel tanks, it is aged for 12 months in barriques. A wine of great character, warm, good body and well balanced.
