Chevillon Chezeaux – Nuits Saint Georges 1er Cru Aux Bousselots – 2018

It is considered one of the noblest expressions of Pinot Noir in terms of elegance and pleasantness, the Aux Bousselots vineyard classified Premier Cru is located behind the village of Nuits-St.Georges, its southeast exposure at an altitude of 280m and clay soils with limestone veins give very mature wines. The Domaine owns small parcels of property where it makes a few thousand bottles, the vines are 30 years old with low yields, the grapes are vinified in oak vats, and after obtaining a good and perfect extraction of the components, aging in oak barrels for at least 15 months is carried out. It is bottled without filtration and clarification. An authentic wine that presents itself in the best way, balsamic and ripe red fruit notes announce good austerity, the palate is fleshy and soft with round tannins. A condition that will always improve as the years go by.

Description

The birth of Domaine Chevillon-Chezeaux is in 1887 by the will of Francois Chevillon who inherited from his father some vineyards in the Cote de Nuits near Nuits-Saint-Georges deciding to start producing the first bottles. The big breakthrough came in 1947 when his nephew George bought plots in the 1er Cru Les Saints Georges vineyard, expanding the family property and introducing cultivation techniques in the vineyards along with new aging methods faithful to tradition. Today they have reached the 5th generation with Claire Chevillon and her husband Philippe Chezeaux who together since 2000 have managed the estate totaling only 7 hectares that include some of the most famous appellations for Pinot Noir. All their quality lies in the savoir-faire, decidedly refined and above standards in which vine care is the basis with short pruning, leafing and low yields to obtain superb clusters. Work in the cellar is perfect and clean, fermentations in wooden vats with frequent “pigeage” which consists of pushing the pomace into the must so as to promote maceration and have more extraction of polyphenolic components, pumping over and aging in oak barrels (20% new) for 12-16 months depending on the appellation and vintage, no clarification and filtration before bottling. If you visit them you breathe only Burgundy air.
