Cavallotto – Barolo Riserva Vignolo – 2018
In 1989, the Cavallotto family purchased 60 percent of the “Vignolo” vineyard adjacent to Bricco Boschis, located on the west south/west side of the village of Castiglione Falletto. Barolo is produced from this parcel only in the Riserva version. The soils in this area have a more important clay concentration, giving the Nebbiolo great structure but also much broader aromas and sweeter tannins. After vinification with indigenous yeasts, the wine undergoes malolactic fermentation in cement tanks and aging for nearly 5 years in large oak barrels. A Barolo of great texture and persistence, with aging potential of more than 20 years, with more persuasive but firm tannins on the finish.

Description
Cavallotto winery is rich in history. It is located in Castiglione Falletto, and it is one of the rare cases to be entirely owner of the Bricco Boschis cru, one of the most famous ones of the area.
The history of this vineyard was born in the middle of 1800’s, just in concomitance with the birth of Barolo wine, thanks to marquise Juliette Colbert Falletti di Barolo who entrusted the work of the vineyard to Giuseppe Boschis, since then the hill was named Bricco Boschis. In 1928 the whole property was bought by Giacomo Cavallotto, creating the Bricco Boschis estate.
Since the 40’s Cavallotto family started making wine with their own grapes, but only since the 60’s the name of Bricco Boschis vineyard will be mentioned in their Barolo.
The story goes on from generation to generation up to nowadays, where Alfio, Giuseppe and Laura are the ones who maintain the family tradition and the qualitative continuity of the wines.
The winery is wrapped by a super traditional aura, the aging rooms are underground, covered by tuff stone at a constant temperature of 15° C (59° F), and only big casks are used for the aging of wines, especially Barolos.
The merit of this estate, despite it owns a whole vineyard with a beautiful position for Nebbiolo da Barolo ( south west ), they also produce lesser wines such as Barbera, Dolcetto, Freisa and Langhe Nebbiolo. Barolo wines are produced only in the best vintages, in order to exalt the quality, fame and austerity that this wine brings with it.
Even in the vineyard, the utmost respect is given to the land and the plants, so much so that they were the first in the Langhe to focus on non-interventionist agriculture, to the point of being certified organic.
Wines of class, tradition, complex, without frills, but with a great ability to evolve. If you want to drink Cavallotto’s wines, don’t be in a hurry….they are wines of other times!
