La Caudrina – Moscato Passito Redento – 2016
The history of Caudrina winery begins with Redento Dogliotti in the early 40’s of the 1900’s, we are in Castiglione Tinella, a small village between Langhe and Monferrato, one of the areas always considered among the best ones for the production of Muscat. Since 1997 the winery is officially in the hands of his son Romano Dogliotti who decided to specialize in the production of quality wines, which respect tradition and territory.
Moscato Passito has been produced in the Langhe area for more than three hundred years, but Dogliotti’s is not a simple Moscato Passito. It was born from years of experimentation that led to the awareness that the grapes, once dried in the vineyard, are harvested and after fermentation the wine must age for at least 18 months in barriques to preserve fragrance and scents. It exudes humanity, serenity and cordiality, and is a wine that comes from the sweat of the brow and toil, but also from passion and love for one’s craft.

Productive Notes:After drying, the grapes are pressed and the must obtained, after a first racking, is fermented with the use of special selected yeasts.
The must ferments at a low temperature, about 15°, until it reaches about 12° of alcohol.
Then the cleaned and filtered wine is put in barriques for the refinement, during which there is a minimal fermentative recovery.
The aging process lasts about 18 months. After this period the wine is filtered and bottled in order to be further aged in bottle for about 6 months.
