The Maison Henriot is undeniably charming today, one of the oldest sparkling wine producers in the region and still independently family-run with no external ties. It was founded in 1808 by Apolline Henriot in Reims, who wanted to pay tribute to her region by producing refined and sophisticated champagnes, a legacy passed down over time to future generations (eight so far, with the current owner being Joseph Henriot), allowing the business to expand and grow. The winery owns about 30 hectares divided between the Montagne de Reims and the C\u00f4te de Blanc, with parcels in some of the most important crus where they grow Pinot Noir (Verzenay, Avenay, etc.) and Chardonnay (Chouilly, Oger, etc.), as well as a tiny amount of Pinot Meunier. For Henriot, the \u201cHemera\u201d Champagne symbolizes a world apart. Perfected over time, the name was chosen in homage to the Greek goddess of light, Hemera, as the beginning of a new journey starting with the 2006 vintage, methodical changes that saw the final version with Cheffe de Cave Alice Tetienne. A vintage composed of 50% Pinot Noir (Verzy, Verzenay, and Mailly) and 50% Chardonnay (Avize, Le Mesnil, and Chouilly) from the six so-called \u201cfounding Grand Crus,\u201d where, unlike in previous years, the best barrels are not chosen, but the best grapes are divided into equal quantities (16.6% of each). The steps are meticulous, each Cru is vinified separately in wood with malolactic fermentation, maturation on the lees lasts 10-12 years, to which is added the liqueur d’expedition composed of old vintages, while the dosage is measured according to what is best without exceeding 5 g\/l. This sparkling wine embodies all the knowledge accumulated over the years, the fulfillment of a desire to realize an idea that became a dream for the company.
