Enclosed within these walls is a millennia-old history, formerly an ancient Cistercian monastery, later becoming a fortress, it has been owned by the Martini di Cigala family since 1914.<br \/>\nToday the winery boasts 160 hectares (organically farmed since 2001), 31 of which are vineyards, while the remainder is divided into woods, arable land and olive groves. Here special attention is paid to everything related to the eco-sustainability of the winery, from the recycling of pruning materials for the use of compost, the installation of a solar photovoltaic system for energy production that covers all the winery&#8217;s needs, the creation of purification plants for irrigation, and the use of indigenous yeasts for the fermentation part of the wines.<br \/>\nIn short, this is one of the most mythical and careful realities in the Italian wine scene. Only the winery&#8217;s own grapes are used for wine production, divided into the indigenous varieties Sangiovese and Canaiolo and international ones such as Merlot. The range of wines is divided into Chianti Classico, the legendary &#8221; Percarlo&#8221; and &#8220;Ricolma,&#8221; to ros\u00e9 and passito &#8220;Vin San Giusto.&#8221; Absolutely memorable wines.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Percarlo is made from the best Sangiovese grapes from vineyards with soils rich in sand, pebbles and layers of clay. For this wine the winery harvested about 800 grams of grapes per plant. After fermenting for 38 days in enameled cement tanks, the wine was aged in barrels of various sizes of 225 liters, 500 and 3000 liters for 2 years, then moved to bottles where it rests for 15 months.<br \/>\nOne of the best pure Sangiovese, suitable for aging 15 years, persuasive, ripe fruit on the nose, pulpy but with great freshness, easy drinking despite the power and structure.
