There could be no better time to witness the birth of spectacular and pioneering wineries, these are in fact the years of the “Italian Wine Renaissance” or an era since 1970 that will see the emergence of important names in the peninsula that will change the way of making wine. Castellare di Castellina was born thanks to Paolo Panerai with the goal of producing wines with the absolute best quality by espousing a traditional philosophy using only indigenous grape varieties such as Sangiovese and Malvasia Nera, but giving room for innovation! The winery as we see it now was born in 1979 in the heart of Chianti Classico in Castellina in Chianti with the union of 4 different estates, but of these the area of Castellare was always cultivated and considered one of the best for the quality of Sangiovese. A total of 80 hectares are cultivated, 33 of which are vineyards, safeguarding the environment by eliminating synthetic chemicals, and the work in the vineyard is more than qualitative with very low yields of no more than 40-50 quin
\nIt is precisely thanks to Paul that we see a rebirth of Castellare!…with studies with Professor Attilio Scienza the first experimental vineyard of Sangiovese clones was born, while in the cellar instead they gave space to the introduction of barriques in the aging following the advice of Emile Peynaud and his friend Giacomo Tachis, two of the best oenologists of the century. Their efforts made them world-famous within a few years, producing some of the most memorable and remembered reds ever (such as the Sodi di San Niccolo’) continuing today to use vitrified cement tanks in vinification and in the transit of the wines before bottling-all supervised today by oenologist Alessandro Cellai. They are to all intents and purposes a true Tuscan symbol, recognizable from time immemorial by their labels each year depicting different endangered birds and their commitment to passing on the legacy in the wines of those who lived and preserved that land before them.<\/p>\n","protected":false},"excerpt":{"rendered":"

Among the annals of Italian wine since its inception, they have been producing mainly Chianti Classico but the winery’s flagship wine for as long as I Sodi di San Niccol\u00f2, the ultimate representation of the two red grapes on which they have laid the foundations. The name comes from this authentic Cru near the church of San Niccolo’ to which it is dedicated, a blend of 90% Sangiovese and 10% Malvasia Nera, the vines are more than 40 years old and are located on a limestone, hard soil rich in stones called “Sodi.” A selected and slightly late harvest, where the grapes are vinified separately in steel tanks where they also undergo malolactic fermentation, then continue with a 30-month aging in barriques (50% new) and 12 months in bottles. Released with the 1977 vintage, it first came sixth in the top 100 list in Wine Spectator magazine in 1988! A perfect wine, soft, persuasive, fleshy but with great freshness, and a huge capacity for aging. The wines of the Castellare winery are a guarantee!
