For many reasons they were forced to travel around France (Paris, Alsace) where they acquired considerable experience and came back home and started their business in 2003. Their Domaine extends in 18 hectares of vineyards spread in many villages of the area (two of which are Premier Cru) such as Maligny, Lignorelles, Fleys as well as in the same commune of Chablis where they cultivate only Chardonnay producing their six labels and giving the maximum value to this grape. During these years they learned to &#8220;talk&#8221; with their land by practicing a thoughtful viticulture in which the environment plays a key role, continued in the winery through natural vinification and a know-how made of incessant controls in order to facilitate high quality.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chablis turned out to be one of the most underrated French wines of the last century but now it has been able to conquer even the most ignorant ones, where Chardonnay expresses great minerality and strong acidity which also favor aging. Near Fleys, in one of their two Premier Cru vineyards immersed in one of the most beautiful parts of the appellation, there is the Les Fourneaux vineyard with 20 years old vines on steep slopes difficult to work characterized by mainly stony soils, ideal for wines with good structure. Grapes are fermented in steel tanks after a light pressing, malolactic fermentation and aging take place in the same tanks for many months.
