Right from the start they decided to specialize in the processing of a single grape variety: Nebbiolo. It was a revolutionary and not at all easy choice, the key principle was to focus on quality and no longer on quantity, so the grapes that were given had to be of excellent choice, beautiful, healthy and well-kept bunches! A further obligation was imposed on producers, all the Nebbiolo grapes owned by them had to be given to the Cooperative.
