They immediately decided to have a unique style in order to best represent the territory and not simply produce a &#8220;sparkling wine&#8221; trying to copy their French friends, after hard work and a lot of study they try a new path, the grapes are harvested only when phenolic ripeness completed (not before, as most producers do), only the first pressing fractions are used (i.e. the best ones in terms of quality) and the added sugar is self-produced (SoloUva method, must previously frozen and set aside).
