San Giusto a Rentennano – Fuori Misura Rosato Toscana – 2021

Fuori Misura rosé is obtained by extracting the must from the tanks of the wines “Chianti Classico, Per Carlo and Ricolma ” in the first 24 hours after the Sangiovese, Canaiolo and Merlot grapes are introduced; a part of the grapes is harvested early and vinified in white.
The wine ferments at a controlled temperature (maximum 25 degrees) in steel tanks, where a small part of destemmed grapes is added. It is presented as a rosé full of color, with intense fruit aromas and a balanced structure, full-bodied, round with a slightly savory finish. A Must.

Description

San Giusto a Rentennano is located in the southernmost bank of the Chianti Classico area. Enclosed within these walls is a millennia-old history, formerly an ancient Cistercian monastery, later becoming a fortress, it has been owned by the Martini di Cigala family since 1914.
Today the winery boasts 160 hectares (organically farmed since 2001), 31 of which are vineyards, while the remainder is divided into woods, arable land and olive groves. Here special attention is paid to everything related to the eco-sustainability of the winery, from the recycling of pruning materials for the use of compost, the installation of a solar photovoltaic system for energy production that covers all the winery’s needs, the creation of purification plants for irrigation, and the use of indigenous yeasts for the fermentation part of the wines.
In short, this is one of the most mythical and careful realities in the Italian wine scene. Only the winery’s own grapes are used for wine production, divided into the indigenous varieties Sangiovese and Canaiolo and international ones such as Merlot. The range of wines is divided into Chianti Classico, the legendary ” Percarlo” and “Ricolma,” to rosé and passito “Vin San Giusto.” Absolutely memorable wines.
